BROCCOLI-RICE CASSEROLE | |
2 (10 oz.) pkgs. frozen broccoli 2 c. frozen whole sm. onions 4 tbsp. butter 2 tbsp. all-purpose flour 1/2 tsp. salt Dash pepper 1 c. milk 1 (3 oz.) pkg. cream cheese 1 c. soft bread crumbs 1/4 c. (1 oz.) grated Parmesan cheese Cook broccoli according to package instructions or until tender; drain. In large saucepan melt 2 tablespoons butter; blend in flour, salt and pepper. Add milk all at once; cook and stir until thick and bubbly. Reduce heat; blend in cream cheese until smooth. Stir in vegetables; turn into 1 1/2 quart casserole. Bake at 350 degrees for 20 minutes. Melt remaining butter; toss with bread crumbs. Sprinkle crumb butter mixture over casserole; bake 15 to 20 minutes more. 10 servings. |
