HONEY GLAZED CORNISH HENS | |
8 (1 -1 1/2 lb.) cornish game hens Salt & pepper Savory Fruit Stuffing 1/4 c. butter, melted 2 tbsp. honey Heat oven to 350 degrees. Remove giblets. Rinse hens and pat dry. Sprinkle cavities with salt and pepper. Lightly stuff each with 1/2 cup stuffing. Tie legs together with string. Place hens in ungreased baking pan. In small bowl, combine butter and honey; brush on hens. Bake at 350 degrees for 1 1/4 hours or until hens are tender and juices run clear. Remove strings before serving. SAVORY FRUIT STUFFING: 1/2 c. butter 1/4 c. chopped celery 1/4 c. chopped onion 1/8 tsp. allspice 4 c. dry bread cubes 1/2 c. dry fruit bits 1/2 c. water Melt butter in large skillet. Add celery, onion and allspice; cook and stir until vegetables are tender. Add remaining ingredients; cook until thoroughly heated. |
