CUCUMBER APPLE RINGS 
1 gallon peeled and sliced cucumbers (yellow and take out seeds)
1/2 c. vinegar
2 tsp. red food color or sm. bottle
1 1/2 tsp. alum
Enough water to cover
2 c. vinegar
4 sticks cinnamon
2 c. water
7 c. sugar
1 c. red hots

Soak cucumbers 24 hours in 1 cup lime, 4 1/2 quarts of water. Rinse until water is clear. Soak 3 hours in ice water. Mix vinegar, food color, alum, and water. Simmer 2 hours. Drain well and put in jars. Mix last 5 ingredients and boil until candy melts. Stir well and pour mixture over pickles and seal jars.
