EASY CRUMB TOP COFFEE CAKE 
Preheat oven at least 20 minutes at 375 degrees.

1 stick (1/4 lb.) butter
1 1/2 c. sifted all purpose flour
1 c. packed brown sugar
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 egg, beaten
1/2 c. milk

Grease bottom of 8 inch round or 7 inch square cake pan. In mixing bowl, combine butter, flour, sugar, baking powder, cinnamon and salt and mix until crumbly, using fingers. Take out 1/2 cup of this mixture for a topping. Beat egg slightly; combine with milk and pour into crumb mixture. Stir vigorously a few seconds to mix well. Pour into pan. Sprinkle crumb topping over surface. Bake at 375 degrees for 30 to 35 minutes until of cake consistency. Serve warm or cold.
