Banana Bread (Soft and Moist)

 Liz Pepin (New Mexico) says:
Just tried the recipe. Excellent. It was very moist. I doubled the recipe because I had so many ripe bananas. I put one batch in a loaf pan which I cooked for 55 minutes and the other in a fluted pan for 45 minutes. My husband absolutely loved it! This will be my banana bread recipe from now on. Thanks a bunch!!

This is a great recipe -- I substituted the regular flour with a gluten-free flour mixture and no one new the difference.

Very good and moist, I didn't like the idea of sour cream (not a big fan) so I used my sons baby food bananas! It kept it very moist and kept the banana flavor as well!! I cant wait to make it again for my family for Christmas!

I substituted whole wheat flour, as it was all I had, which can sometimes cause bread to be dry, but this recipe was still nice and moist! I also had no sour cream, so I used 1 tbsp. white vinegar plus milk to make 1/2 cup liquid. This is a useful in a pinch when you have no sour cream.
