BANANA BREAD (SOFT AND MOIST) 
1/2 cup (1 stick) butter
2 eggs
1 cup white sugar
1 tsp. vanilla extract
1 cup ripe mashed bananas
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
1 1/2 cups sifted all-purpose flour
1/2 cup chopped walnuts (optional)

Preheat oven to 350°F.

Mix: butter, eggs, sugar, vanilla in a bowl and mix until creamy.

Add: bananas, cinnamon and mix well.

Add: baking soda, salt, sour cream, flour, mix until all smooth.

Pour into a greased and floured loaf pan.

Bake at 350°F for 1 hour or until done.

Love this recipe and have made it exclusively for 5 or more years. When I moved I thought I lost it but thankfully I found it in a saved email. The sour cream is the secret ingredient that sets this recipe apart. It's moist and perfect for 1 loaf pan. Other recipes use too much sugar and never come out as yummy to me. TIP allow cake to thoroughly cool IN loaf pan before cutting. Also it bakes more evenly if you use a good loaf pan versus another round or square cake pan IMHO. Enjoy!!

I am a chef & wanted to try this out. I made a big batch x10 & got 3 big loafs out of it. It was delicious... I think the sour cream is a big part of keeping it moist. They make the recipe for a reason to follow it & it's totally worth it.

I just baked, oh my!!! So good, soft deliciously, I doubled the recipe and used 1 1/2 cups of sugar and 6 medium bananas, baked for 40 minutes. This is my first banana bread that come out great!!!
