CRISPY BAKED SKINS 
2 Idaho potatoes, (8 oz. each), scrubbed & patted dry
2 tsp. unsalted butter
Freshly ground black pepper to taste

Preheat oven to 375 degrees. Prick the potatoes all over with a fork. Place them on a baking sheet and bake until the skin is very crisp (1 1/2 hours). Cut a long oval out of the top of each potato. Remove the inside of potatoes and save for another use. Put 1 teaspoon butter inside each potato skin and return to oven for 5 minutes. Sprinkle with pepper and serve immediately. Can also top with cheese, chives, scallions.
