CRISPY SKIN BAKED CHICKEN 
This recipe is so simple! My family loves it though and end up fighting over the crisped skin. I use 1 leg quarter (thigh and drum attached) per person.

chicken leg quarters
favorite seasoned salt
broiling pan

Clean chicken, pat dry. Place quarters on the broiling pan, skin side up, pieces NOT touching. Sprinkle with favorite seasonings (I use Nature's Seasoning or Adobe Seasoning). Place chicken in middle rack of a preheated 375°F degree oven. Bake until skin is browned and crunchy. DO NOT poke holes in the chicken as you will release all the good juices.

Note: 99% of the time, if your skin is medium brown and very crisp, the chicken will be completely done (or carefully check with a meat thermometer for 160°F).

We all have our favorite dipping sauces to go with this chicken, but it also good all by itself. I use this method of cooking my chicken for chicken noodle soup, arroz con pollo, and a variety of other dishes that are better using a roasted chicken.

Leg quarters are also a very inexpensive meal. The estimated time this takes is about an hour depending on your oven and the thickness of the quarters.
