5 HOUR BEEF STEW 
2 lb. beef stew meat (lean)
1 or 2 stalks of celery
4 or 5 carrots, cut any length
3 or 4 potatoes (more if you like)
1 med. onion, cut up or sliced
1-2 c. tomato juice (or V-8)
3 tbsp. instant tapioca
Vegetables of your choice can be added

Bake in a 9x13 pan, covered tightly with foil or lid, for 5 hours at 250 degrees. Do not open while cooking.
