MIXED VEGETABLE CASSEROLE 
2 boxes frozen mixed vegetables
1 c onions, chopped
1 c celery, chopped
1 c mayonnaise
1 c. grated sharp cheddar cheese, divided
2 c Ritz crackers
1 stick butter, melted

Cook mixed vegetables as directed and drain. Add onion, celery, mayonnaise and 1/2 cup grated cheddar cheese to vegetables. Pour into flat casserole dish. Mix Ritz crackers, butter and 1/2 cup grated cheddar cheese together. Put this on top of vegetable mixture and bake at 300 for 30 - 40 minutes or until brown and bubbly.
