VEAL ROAST WITH HERBED MUSHROOM
BACON SAUCE
 
1 veal roast (3-4 lbs.)
1/3 c. oil
1 tsp. paprika
2 cloves garlic, pressed
1/4 tsp. salt
1/8 tsp. white pepper
2 tbsp. vermouth

Combine ingredients in large baking dish. Roll the roast in the marinade. Let stand at room temperature 1 hour. Baste roast. Preheat oven to 300 degrees. Roast right in pan 2 hours. Place on serving platter. Remove strings. Reserve pan juices for the sauce. Carve roast and serve with Bacon and Mushroom Sauce.

BACON AND MUSHROOM SAUCE:

Saute until tender: 1/2 lb. mushrooms, sliced 1 onion, chopped fine

Add: 1 c. cream 1/2 c. pan juices 1 tbsp. chopped chives 1 tbsp. parsley flakes

Simmer all ingredients until sauce thickens. Serve with roast.
