EGGS A LA SUISSE 
2 oz. Swiss cheese, thinly sliced
Salt
1/4 c. half and half
Freshly grated nutmeg
4 eggs, room temp.
4 tsp. Parmesan cheese
Cayenne pepper
1/2 c. shredded Swiss cheese

Preheat oven to 350 degrees. Fill roasting pan with 1/2 inch water and place in oven. Divide sliced cheese among 4 custard cups. Break 1 egg into each cup. Sprinkle with Parmesan, salt and cayenne. Spoon 1 tablespoon half and half over each. Sprinkle with Swiss cheese and nutmeg.

Place cups in roasting pan. Bake until cheese melts and eggs are set, 15 to 18 minutes. Remove cups from water and dry carefully. Serve hot. 4 servings.
