GRANDMA'S MEAT LOAF | |
2 lbs. ground meat 1/4 lb. ground pork 1/4 lb. ground veal 1/2 lb. saltine crackers, crushed 1 egg 1 (28 oz.) can tomatoes 1 lg. onion 1 bunch parsley Leaves from one bunch celery 1/2 tsp. ground pepper 1 tsp. salt Combine meats, add egg and crushed crackers. Put onion, parsley and celery leaves thru meat grinder or chop very small in blender. Add vegetables and tomatoes with juice and salt and pepper to meat mixture. Mix thoroughly. Shape and place into large well greased meat loaf pan. Place in roaster with 1 inch water in bottom. Cover and bake at 500 degrees for 1/2 hour. Lower heat to 350 degrees and bake 1 hour more. Serve at once or chilled, (better cold). Serves 6. |
