SQUASH CASSEROLE 
1/2 lb. bacon
Buttered bread crumbs or croutons
Approx. 6 yellow squash, sliced
1 lg. yellow onion, sliced
Salt and pepper to taste
1 c. Cheddar cheese

Cook squash and onion in small amount of water until tender.

Cook bacon and drain on paper towel saving small amount of grease (1 tsp.).

Make white sauce, adding butter to top of bacon grease.

When squash is tender, drain off excess liquid and place in casserole dish. Crumble bacon on top of vegetables. Top dish with bread crumbs/croutons.

Pour white sauce over entire dish. Top with Cheddar cheese and bake at 350 degrees until cheese is melted and dish bubbly. Serves 4-6.
