BACON AND BLACKEYED SALAD | |
1 pkg. of 10 oz. frozen blackeyed peas 1/4 cup of sugar 1/4 cup of vinegar 1/4 cup of water 8 slices of bacon 1 head cauliflower 1/2 cup of diced celery 4 green onions chopped 1 tablespoon of brown sugar 2 tablespoons of vinegar 1/2 teaspoon of salt Cook peas. Combine peas and next three ingredients and stir well. Cover and chill for 3 hrs. Cook bacon until crisp. Crumble bacon. Cook cauliflower until crispy tender. Drain peas and add cauliflower, celery, onions and bacon. Combine 2 tablespoons of bacon drippings, brown sugar, two tablespoons of vinegar and salt in a saucepan. Cook on low until hot. Pour over veggies. Toss gently. |
