HEALTHY CHILI 
3 (14 oz.) cans kidney beans
1 1/2-2 lb. ground meat (beef, turkey, chicken)
1 qt. tomatoes
2 peppers, chopped
2 med. onions, chopped
1 pkg. chili mix
2 carrots, ground

Drain kidney beans and rinse. Brown ground meat with peppers and onions. Combine all ingredients and simmer 30-45 minutes.

I cooked it as above, with ground turkey, I used two packages of Chili mix & 1 red & green pepper, I left out the carrots. After 30 minutes I added 1 & 1/4 cup of long grain white rice. It didn't cook fully in the last 15 minutes. it gave the Chili a good taste and the semi-crunchy rice was a perfect touch.
