FAST AND HEALTHY LASAGNA 
1 lb. ground turkey
1 (16 oz.) jar spaghetti sauce
1/2 lb. uncooked wide noodles
1 pt. low-fat cottage cheese
Parmesan cheese, grated
Water to cook noodles
1/2 c. chopped onion
1 clove garlic, minced
Olive oil (optional)
Salt (optional)
1/2 tsp. oregano

Lean ground beef or chicken may be used, but turkey has the best flavor.

Saute' onion, garlic, and ground turkey until brown, drain if necessary. Meanwhile, boil water (add salt and 1 tablespoon olive oil to water, if desired), and add noodles. Cook according to package directions until just tender (al dente). Add spaghetti sauce and oregano to cooked turkey. In a casserole, layer noodles, sauce and cottage cheese, stirring gently to blend slightly. Sprinkle grated Parmesan cheese on top.

MICROWAVE: Cook on high 5 to 8 minutes, let stand 5 minutes. CONVENTIONAL OVEN: Bake at 375 degrees for 15 minutes, let stand 5 minutes. Serve with green salad and crusty bread.

Since microwave ovens vary in power, you may need to adjust your cooking time.
