SHEILA'S POTATO KUGEL | |
6 lg. potatoes, peeled & quartered 1/4 c. butter 3 onions, chopped 3 tbsp. fine matzo meal 1 tsp. baking powder 1/2 tsp. salt 1/2 tsp. black pepper 2 eggs, lightly beaten Boil potatoes in water to cover until cooked, about 20 minutes; drain and mash them. Preheat oven to 400 degrees. Grease a 2 quart casserole dish. Melt butter in a skillet and saute onions until they are transparent (about 5 minutes). Pour onions and fat over the potatoes and mix well, add the spices. Put mixture into the baking dish. Bake for 45 minutes or until the crust is golden brown. |
