THE BEST POTATO KUGEL 
10 med. potatoes, peeled
4 lg. onions
1/2 c. matzo meal
1/2 c. peanut oil
Salt & pepper to taste

In food processor, finely mince 2 onions. Fry the onions in oil until very, very brown. Grate potatoes using shredding disc of food processor. Then use chopping blade so potatoes are more finely grated or use hand grater. Puree remaining 2 onions.

Mix eggs with both pureed onions and fried onions, including the onion the pan onions were cooked in. Add potatoes and matzo meal and mix well. Salt and pepper to taste. Bake in large glass pan at 400 degrees for 45 minutes or until well browned.
