APRICOT NUT BREAD | |
1 (17 oz.) can apricot halves 2 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped walnuts 2/3 c. sugar 1/3 c. butter 2 eggs 3 tbsp. orange or lemon juice Heat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan and set aside. Drain apricots, reserving syrup. Puree apricots in a blender o force through a sieve. Add enough apricot syrup to measure loaf; set aside. In a small bowl, sift together flour, baking powder, baking soda, and salt. Stir in nuts and set aside. In a large mixer bowl, cream together sugar and butter. Beat in eggs. Stir in orange or lemon juice and reserved puree. Stir in flour nut mixture until combined. Pour batter into the prepared pan and bake 40-50 minutes. Cool 10 minutes. Remove from pan. |
