APRICOT-NUT BREAD 
1 c. chopped dried apricots
1 tbsp. hot water
2 1/2 c. sifted all-purpose flour
1 c. sugar
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
2 eggs
1 c. buttermilk
1/4 c. apricot nectar
3 tbsp. melted butter
1 c. chopped walnuts

Soak apricots in hot water to plum and tenderize. Stir together flour, sugar, salt, baking powder and soda in a large mixing bowl. Mix eggs, melted butter, buttermilk, apricot nectar; add to flour mixture and mix. Stir in plumped apricots and walnuts.

Turn batter into a greased 9x5 inch pan; bake in preheated 350 degree oven for 60 to 75 minutes or until a cake tester comes out clean. Turn out on wire rack to cool.
