SWEET AND SOUR BLACKEYED PEAS 
3 (#2) cans blackeyed peas, drained
2 c. cooked diced carrots, drained
1 med. onion, chopped
1 med. green pepper, chopped
1 sm. jar pimento, chopped, drained
3/4 c. sugar
3/4 c. vinegar
2/3 c. salad oil

Combine and marinate overnight. Serves 10-12.
