HOME MADE POTATO BREAD | |
1 medium potato, boiled & sieved 3 c. of potato and water 2 pkg active dry yeast soaked in 3/4 c. of warm water and 1 tbsp. sugar 3 tbsp. butter, lard or shortening 1 tbsp. salt 8 to 10 c. flour Dissolve yeast and sugar in 3/4 cup of lukewarm water. Set aside for 5 minutes. Add cooled potato to water, enough to make 3 cups. Add butter, lard (or use any shortening - lard will make a chewy, rich bread, oil will make a dense bread, butter will make a rich, tender and flavorful loaf). Add salt and enough flour to make a sponge. Beat well, let rise for an hour, covered, in a warm, draft-free place, then add enough flour to make firm dough. Knead and place in greased pan, cover and let rise till double in size. Punch down and let rise again. From into loaves and let rise for another hour or until double the size.
