CHICKEN AND ARTICHOKE CASSEROLE 
3 lbs. chicken breasts, skinned and boned
Salt and pepper
Paprika
4 tbsp. butter
1/4 lb. mushrooms, sliced
2 tbsp. butter
2 tbsp. flour
2/3 c. chicken broth
3 tbsp. sherry
1 can artichoke hearts

Sprinkle chicken with salt, pepper, and paprika. Brown in butter and place in large casserole. Saute mushrooms and place around chicken.

Melt butter in saucepan and add flour. Blend and slowly add broth and sherry. Place artichoke hearts around chicken, cover with sauce, and bake at 375 degrees for 40 minutes. Serves 4 to 6.

I sometimes make 1 1/2 times sauce and add 2 cans artichoke hearts. I also halve the chicken breasts as most women can eat only 1/2 of one.
