SPICED GARLIC OKRA 
2 c. water
2 tbsp. finely chopped onions
1 tsp. finely chopped garlic
Dash red hot pepper
Salt to taste
1 lb. fresh okra (stems removed)

Bring water to a boil with onions, garlic, salt and pepper. Cook okra quickly for about 15 minutes. Run immediately under cold water to stop cooking and restore the green color. Sprinkle with fresh lemon and chill before serving.
