BAKED BEANS BY BRENDA | |
1 sm. pkg. dry pinto beans (1 lb.) 1 lb. bacon, raw and cut up (Rath Smoky Maple is good) 2 lg. onions, chopped 1 tbsp. molasses 3/4 c. brown sugar 1 tsp. each ginger and dry mustard 1 lg. can tomato juice Salt and pepper to taste Wash beans. Soak overnight. Rinse in clear, fresh water and put on stove and bring to a boil. Remove from heat and add 1 teaspoon baking soda. Stir and drain. Add remaining ingredients and cover tightly. Bake at 275 degrees. Check about every 2 hours to see if water is needed and add if necessary. Cook until beans are very soft - not just tender. You will probably need to cook 5 hours or more. Great with barbecue!!! |
