CASSEROLE CARROTS | |
2 lbs. carrots 2 tbsp. butter 2 tbsp. all purpose flour 3/4 tsp. dry mustard 1/2 tsp. paprika 1/8 tsp. black pepper 2 c. milk 1/4 c. grated Parmesan cheese 1/2 c. canned French fried onions Peel carrots, slice crosswise on the bias, and cook in boiling water until tender. Drain. In small saucepan, melt butter. Add together dry mustard, paprika, and black pepper. Add to melted butter. Add milk and stir until thickened and mixture begins to bubble. Stir in cheese. Combine cooked carrots and sauce in a 1 1/2 quart casserole dish. Bake at 350 degrees for 30 minutes. Sprinkle French fried onions over casserole. Bake for an additional 3 minutes. |
