GREEK TOMATO PILAF | |
2 med. tomatoes, coarsely chopped 2 tbsp. chopped onion 2 tbsp. butter 2 c. water 1/8 tsp. pepper 3/4 tsp. salt 1 tsp. instant beef bouillon 1 c. uncooked rice Cook tomatoes and onion in butter for 2 minutes. Stir in remaining ingredients. Heat to boiling, stirring occasionally. Reduce heat, simmer with cover on for 14 minutes. Do not lift cover or stir. Remove from heat, fluff rice with fork. Serve with grated Parmesan cheese. Makes 8 servings. |
