SWEET POTATO SOUFFLE 
1 (18 oz.) can sweet potatoes (or cooked sweet potatoes), drained and mashed
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1 c. sugar
1/2 c. milk
1/3 stick butter, melted

TOPPING:

1 c. brown sugar
1/3 c. butter, melted
1/2 c. flour
1 c. pecans

Combine ingredients for souffle and pour into buttered casserole pan. Combine ingredients for topping and crumble topping mixture over potato mixture and bake at 350 degrees for 35-45 minutes. Casserole dish should be uncovered. This recipe is complements of La Comedia dinner theater in Springboro, Ohio.
