SWEET POTATO SOUFFLE 
3 c. cooked/mashed sweet potatoes
1/2 tsp. salt
1/3 stick butter
1 tbsp. vanilla flavoring
2 eggs
1 tsp. coconut flavoring
1 tsp. almond flavoring
1 c. sugar
1/2 c. milk

Mix all above ingredients well. Pour in baking dish.

TOPPING:

1 c. brown sugar
1 c. nuts
1/3 c. flour
1/3 stick melted butter

Mix thoroughly and sprinkle over souffle. Bake 350 degrees for 35 minutes.

Optional: May add 1 cup of coconut to potatoes or to the topping.
