SWEET POTATO SOUFFLE | |
2 c. sweet potatoes, mashed 1 1/2 c. sugar 2 eggs 3/4 stick butter 1 c. milk 1/2 tsp. nutmeg 1/2 tsp. cinnamon TOPPING: 3/4 c. corn flakes, crushed 1/2 c. nuts, chopped 3/4 stick butter 1/2 c. brown sugar Bake or boil potatoes and mash. Add remaining ingredients and mix well. Pour into casserole and bake in 400 degree oven for 20 minutes. Topping: Melt butter and combine with crushed corn flakes, nuts and brown sugar. Spread evenly over sweet potatoes and return to oven for 10 minutes at 400 degrees. |
