VESTA'S SHRIMP CASSEROLE 
1 bell pepper, chopped
1 onion, chopped
1 stalk celery, chopped
Garlic, to taste
1 1/2 c. raw rice
1 can Rotel tomatoes
1 can cream of mushroom soup
1 can clear broth
3 cans shrimp or crabmeat

Saute garlic, bell pepper, onions and celery. Then add remaining ingredients. Bake in casserole dish at 350 degrees until rice is done.

Note: May also be cooked in rice cooker. Saute the seasonings, then add other ingredients. Put in rice cooker and cook as you would rice.
