SUPER SCALLOPED POTATOES 
Great served with ham or pork chops!

6 potatoes, peeled and cut into 1/8-inch slices
1 large white onion, cut up and fried to a light brown
1 can cream of mushroom soup
1 cup sharp grated cheddar cheese
salt and pepper, to taste

Prepare a 12x7x2-inch baking dish with Pam and place a layer of potatoes along the bottom. Put a thin layer of onions on top of this with some of the grated cheddar. Continue building layers until all the ingredients are used up. Over the top pour the cream of mushroom soup and ease the edges of the pan so that the soup seeps into the mix.

Cover the baking dish with foil and bake for 1 1/2 hours at 350°F. Remove foil from dish, sprinkle a thin layer of cheese over the top and return to oven for a final 15 minutes cooking.
