COURTNEY'S SUPER CHEESY SCALLOPED POTATOES | |
This recipe is easy to adjust and always comes out great. Soooo yummy!!! potatoes (depends on how big you are making your casserole) sliced Swiss cheese (optional) grated cheddar cheese SAUCE: 1 (10 oz.) can cheese soup 1 to 2 cups milk 1 to 2 tbsp. all-purpose flour 1 sweet onion, diced (optional) 1 can green chilies (optional) salt and pepper, to taste other seasonings, if desired Peel potatoes, cut in half then slice them thin (no need to peel when using red potatoes). Rinse them to get starch off. In a saucepan, heat cheese soup, milk and whisk in flour. Add diced onion (if you want). Add green chilies (if you want). Add salt, pepper and any other seasonings you want in the sauce. ASSEMBLY: Layer sliced potatoes in casserole dish. (This is where I add the Swiss cheese - I layer half the potatoes, put down a layer of Swiss then add the rest of the potatoes on top, not necessary but good). Pour sauce over potatoes, cover with foil put in oven at 400°F until potatoes are tender, usually 45 to 60 minutes. Take foil off last 10 minutes, sprinkle grated cheddar cheese over top and return to oven. Enjoy! Submitted by: Courtney |
