MARGARET'S SPAM AND SCALLOPED POTATOES | |
6 large baking potatoes 2 (12 oz. ea.) cans Spam WHITE SAUCE: 1/4 cup vegetable oil (your choice - just not olive) 1 large onion, diced 6 tbsp. all-purpose flour 2 cups milk (whole, not skim) salt and pepper, to taste Place potatoes in a large pot with water and boil them until fork tender (leave on skins). Cut onion in small dice and place in oil on low heat and cook until tender. When they are tender add flour and cook about 4 minutes (just get the flavor of raw flour out). When this is done pour milk into the mixture and stir until thick (not too thick - still goes in the oven). Season with salt and pepper at this time. When potatoes are done, drain and run cold water over them. Place in a bowl and remove skins with a butter knife. In a casserole dish begin layering potatoes and spam. Continue until you end up with potatoes on top layer. Pour white sauce on top. Tip: Use a knife to poke holes in the potatoes so some of the sauce will go to the bottom. Bake at 375°F until heated through, about 15 minutes. Serve with a tossed salad and you will have a great meal in no time at all! Submitted by: Margaret Neal |
