VEGETABLE SANDWICH FILLING 
1 c. celery, chopped fine
2 cucumbers, peeled and seeds removed
2 carrots, grated
1 sm. onion, grated
1 pkg. unflavored gelatin
1 c. mayonnaise
1 tbsp. lemon juice

Mix together first four ingredients and add 1 teaspoon salt. Drain well in 1 hour by squeezing through strainer or with hands. Mix gelatin with 1/4 cup water. Let stand to dissolve, then heat gelatin. Add mayonnaise, lemon juice, and drain vegetables. Mix well. Chill and spread on thin sliced bread. Can be served opened face. Will keep a week in the refrigerator. Makes about 10 sandwiches.
