BLUEBERRY GEMS MUFFINS 
1 cup self-rising flour
3/4 cup sugar
1 egg, slightly beaten
1/2 teaspoon vanilla
1/4 cup oil
1/4 cup milk
1/2 cup blueberries

Combine flour and sugar in a large bowl and set aside. In another bowl, mix the egg, vanilla, oil and milk. Make a well in the center of the dry ingredients and add the liquid ingredients. Stir until just mixed. DO NOT over mix. Rinse the blueberries in a colander and fold them into the batter. Spoon batter into greased muffin pan or pan lined with paper liner. Bake at 375°F for 25 minutes.

Makes 12 muffins.
