EASY BLUEBERRY MUFFINS 
1 1/2 c. self-rising flour
1 egg
1/2 c. milk
1/4 c. oil
1/2 c. sugar
1 c. fresh or frozen blueberries

Heat oven to 400 degrees. Grease muffin pans. Beat egg; stir in milk and oil. Add dry ingredients, stirring until flour is moistened (should be lumpy). Stir in blueberries. Fill muffin cups 2/3 full and bake 20-25 minutes or until golden brown. Makes 12.

I used 3/4 cups of sugar instead of 1/2 and used 1 and 1/2 of blueberries because i like my muffins PACKED with fruit. This recipe really worked for me .. THEY TASTED GREAT :-)

I am an experienced cook but novice baker. I followed the directions and they came out awful. Dry and cracker-like and not in a good way. I can usually repurpose or save any cooking mishap but these are beyond help. I cant even cover them with butter or sugar to make them edible.

Yes! This morning, I only had canned bluebery pie filling to use to make these muffins. I rinsed off the filling and folded the blueberies into the batter. After 20 minutes baking in slightly undersized muffin tins, Dad and I had some fine muffins for breakfast! Excellent recipe!

The recipe is very easy, comes out beautiful, and tastes good but it definitely seems to be missing the sweetness that I love in a muffin. I think if I use it again I will try more sugar and see if that helps.
