PICKLED EGGS IN BEET JUICE 
4 small red beets
1/2 c. cold water
2 eggs, hard-boiled
1 stick cinnamon
1/4 c. brown sugar
3 whole cloves
1/2 c. vinegar

In saucepan, boil young beets until tender. Skin and cover with liquid made by combining brown sugar, vinegar, water, cinnamon and cloves. Let beets stand in mixture for several days. Remove beets and add eggs. Let stand for 2 days.
