CHICKEN CROQUETS 
1/4 c. melted butter
1 c. milk
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. flour

Put butter in pan, add in other ingredients before you turn on heat. Take a flat bottomed wire whisk or flat wooden spoon and stir constantly over medium heat until it makes a thick sauce.

Add 1 tablespoon finely chopped onion and 2 cups chicken shredded into small pieces. Put in a covered bowl in the freezer until it is stiff enough to work with. Form oval balls, that are approximately 2 1/2" x 3 1/2". Dip into a mixture of 1 egg and 2 tablespoons cold water and roll in crushed bread crumbs. Deep fry until golden brown or bake at 350 degrees for approximately 20 minutes. Serve with chicken gravy on top.
