EASY CHICKEN FLORENTINE 
4 single boneless chicken breasts, skinned
1/2 c. flour
1/4 tsp. salt
1/4 tsp. pepper
2 (10 oz.) boxes frozen chopped spinach, thawed & squeezed dry
1 lg. onion
1/3 c. Parmesan cheese
Vegetable oil

Saute onion and spinach in oil until onion is soft. Spread in bottom of greased casserole dish. Combine flour, salt and pepper. Dredge the chicken in the flour mixture and shake off the excess. Saute breasts in oil until golden brown. Lay breasts on top of spinach. Sprinkle with Parmesan cheese. Cover and bake at 350 degrees for 35 to 40 minutes. Serve with hot, buttered noodles.
