HOLIDAY SWEET POTATO CASSEROLE 
3 c. mashed yams
1/2 c. sugar
2 eggs, beaten
3/4 c. melted butter, divided
1/4 c. evaporated milk
1 tsp. vanilla extract
1/4 c. all purpose flour
1 c. firmly packed brown sugar
1/4 c. chopped nuts

Combine yams, sugar, eggs, 1/4 cup butter, milk, and vanilla. Beat well. Spread mixture in a casserole. Combine 1/2 cup butter, flour, brown sugar and nuts; sprinkle over sweet potato mixture. Bake at 350 degrees for 35-40 minutes. Yields 4-5 servings.
