LIME COOKIES 
1/2 c. butter
1 c. sugar
1 egg plus 1 egg yolk, beaten
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. lime juice
1 tsp. grated lime rind
1/2 tsp. grated lemon rind

Cream butter and sugar; beat in eggs. Sift the flour, baking powder, and salt. Add flour mixture alternately with lime juice. Beat thoroughly. Add lime and lemon rind.

Drop by teaspoonfuls onto oiled cookie sheet, leaving room to spread. Bake at 350 degrees for 8-10 minutes or until golden. Transfer to wire rack to cool.

Sprinkle on sugar. Makes 80 small cookies. May be frozen.
