ESKIMO COOKIES 
2 c. sugar
1 stick butter
1/2 tsp. salt
5 tbsp. cocoa
1/2 c. milk
3-4 c. quick cooking oatmeal
1/2 tsp. vanilla

Combine above ingredients (except vanilla and quick cooking oatmeal) in saucepan, stir constantly and bring to a boil. Boil for one (1) minute. Remove from heat and cool for two (2) minutes. Stir in 3 cups quick cooking oatmeal. If too thin, add 1/2 to 1 cup additional oatmeal. Add 1/2 teaspoon vanilla. Drop by teaspoons onto wax paper. Refrigerate until set. Enjoy!
