GROUND BEEF CASSEROLE 
1 to 1 1/2 lbs. ground beef
1 lg. onion, chopped
4 to 6 carrots, sliced and cooked
1 can kidney beans, drained
1 green pepper, chopped, optional
1 can cream of tomato soup, undiluted

Saute ground beef, seasoning with salt, pepper and garlic powder, if desired. Drain off fat, if any.

In large casserole, place layer of beef, onion, green pepper, kidney beans and carrots. Repeat, ending with carrots.

Spread cream of tomato soup evenly over all. Bake, uncovered, at 350 degrees for about 45 minutes to 1 hour. NOTE: This is especially good reheated.
