BEEF & VEGETABLE CASSEROLE 
10 oz. frozen Lima beans
1 1/2 carrots, sliced thinly
1 c. boiling water
1 1/2 lbs. lean ground beef
2 tbsp. chopped onions
1 tbsp. oil
1 can cream of mushroom soup
1/2 c. vegetable oil
1 1/2 tsp. salt
1/4 tsp. thyme
6 3/4 inch thick tomato slices
1/2 tsp. salt
2 tbsp. Parmesan cheese

Boil 1 cup water, add beans and carrots. Cook 15 to 20 minutes until tender. Drain, save 1/3 cup liquid. Brown beef in oil. Drain. Add soup, vegetables, salt and thyme. Mix well. Pour into casserole dish. Top with tomatoes. Sprinkle with salt and cheese. Bake at 350 degrees for 35 to 40 minutes.
