ITALIAN BEEF & VEGETABLES CASSEROLE | |
1 c. finely chopped celery 1/2 c. finely chopped carrots 1/2 c. finely chopped onion 2 cloves garlic, minced 1/3 c. vegetable oil 4 oz. noodles, cooked 1 lb. lean ground beef 3/4 c. tomato paste 3 c. chopped tomatoes 1 1/2 tsp. oregano 1 tsp. basil 1/2 tsp. thyme 10 oz. frozen chopped spinach 1 c. grated Cheddar cheese Cook celery, carrots, onions and garlic in oil. Add beef and brown. Add tomato paste, tomatoes and seasonings. Simmer 1 hour. Chop spinach and drain well. Add with noodles to sauce, turn into casserole. Top with cheese before baking. Bake at 350 degrees for 20 minutes if warm, 45 minutes if cold. |
