Short ening
1 egg
1 (12 oz.) can whole kernel corn
1 (4 oz.) pkg. (1 c.) shredded Cheddar cheese
1 (7 or 8 oz.) pkg. corn muffin mix
1 (5 1/2 oz.) pkg. sm. smoked sausage links

Preheat oven to 400 degrees. Put some shortening on a piece of paper towel and spread over the bottom and sides of baking dish.

Crack egg into mixing bowl. With fork, beat the egg until yolk and white are mixed. Add undrained corn and half of the cheese to the egg and mix well with wooden spoon. Add dry muffin mix. Stir until the dry ingredients are wet. Spoon batter into baking dish.

Pat sausage links dry with paper towel. Arrange links on top of the batter. Put in oven and bake about 30 minutes or until top is golden. Sprinkle with remaining cheese. Let stand 5 minutes. Cut into squares. Makes 4 servings.
