CHICKEN STUFFED WITH CHEESE 
5 pieces deboned chicken breast
oregano
dab of butter
Monterey Jack cheese
1 egg
1/2 c. flour
1/2 to 1 c. seasoned bread crumbs

You will also need wooden toothpicks.

Lemon Sauce:

2 tsp. flour
1/3 c. water
1/2 tsp. Tabasco sauce
3 tbsp. lemon juice
1 1/2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. poultry seasoning

Sauce: Heat butter and garlic. Blend in flour and cook over low heat until bubbly. Remove from heat and stir in all other ingredients. Heat to boiling. Pour over chicken and bake at 350°F for 45 to 60 minutes.

Chicken Preparation: Pound chicken breast flat; put a little butter and sprinkle oregano on chicken. Put a small square or slice of Jack cheese on chicken. Roll chicken and fasten with wooden toothpicks. Roll chicken pieces in flour; dip into beaten egg with milk, then roll in seasoned bread crumbs. Place in pan. Pour lemon sauce over chicken and bake.
