POTATO CASSEROLE 
10 potatoes, boiled with jackets on cooled and cubed or 1 lg. bag frozen hash browns
1/2 lb. Velveeta cheese, cubed
1 green pepper, chopped
1 sm. jar chopped pimento
2 slices bread soaked in 3/4 c. milk
Salt and pepper
1 c. crushed cornflakes
1/2 c. melted butter

Tear soaked bread in small pieces. Mix potatoes, cheese, green pepper, pimento, and bread together. Place in casserole dish 9 x 13. Mix cornflakes and butter and place on top. Bake 1 hour at 350 degree oven.
